Sounds like your puppy is growing up and has plenty of energy with a touch of devilment to go with it :) or that your pup has been allowed to become so tightly bonded to you that when you leave it acts up to help relieve its tension.
So this could be that the pup just knows when you aren't watching it can get away with doing 'fun' things such as chewing or ripping things up.

Or if this behavior seems to you like the dog is terrified when you are gone then this might be early stages of separation anxiety.
For the 'having fun' situation this is where having a dog crate or a puppy proofed room is rather like having a playpen for a toddler - its a safe place you can 'park' the dog while you are not able to supervise closely. You make sure the pup has chew toys to keep it busy that it only gets in the crate or safe room and any time you can't watch the pup it spends some time in the crate so your home is safe from his teeth.
If this is an anxiety based issue you may find doing some independence training helpful in teaching your dog it can handle being alone.
