I have a 2011 nightster upgrade to s&s big bore cylinders

I have a 2011 nightster upgrade to s&s big bore cylinders refurbed the crank/rods new cams, air filter, two bros 2-1 exhaust . power commander V mapped and tried to dyno , keep throwing p0118 code supposedly changed temp sensor , replaced ecm ,replaced wire harness, still throwing p0118 code , whats the deal? could the crank/cam position affect the sensor causing the error code?

P0118 = engine temperature sensor high.

your bike has no crank/cam position sensor issues. it only has a crank position sensor.

what did you do with the heads?

in your post you mentioned everything that needed to be done except the heads.
