Are you sure you did the same thing (reverting to previous version) on Word 2008 for Mac? I just tested using my Word 2008, it doesn't work that way.
Therefore you have to rely on El Capitan's TimeMachine to get your files back, if available.
When were the previous version created? Hours ago or days ago?
The default interval setting for TimeMachine is one hour, so it should have been backed up by your TM if it worked as expected.
