I guess you are referring to the information such as author name, organisation and revisions etc in File Properties of an Excel file? Am I correct?

No on the top right of the screen is the name of the person that is signed in

Thank you need to produce screen shots for exhibits and can't have a name in the header other then the file name...

BTW, might be a silly question: if you log out from Office 365, you can't use your local Excel at all? I am using Excel 2013, sign-in seems to be an option for me, not necessary. As I remember you should be able to use it offline. :)
