How can I restrict a field's input to a predefined list of choices, not allowing a user to input anything other than what I define - kind of like a drop down menu with the choices that only I define?

In order to limit a cell to pre-defined choices, you can select a cell, click on the Data tab, and select Data Validation. From there, select the Data Validation option from the drop down

In the Allow box, you have several pre-defined options such as decimals and times that you can further tweak with the Data options
