Can you better describe the problem you are having with your 2001 Sable?
Does the engine stall when stepping on the brakes?
Does the vehicle vibrate when stepping on the brakes?

Vibrates when stepping on brakes.
Slow to accelerate.

How does the engine run at idle?

No. Only when on the brake.

Is the brake pedal hard to push and is it hard to stop the vehicle?

Not at all. They work great actually. Just the putt putt when at light or stop sign or backing out with foot on break.

Is there a hissing noise under the dash when you step on the brakes with the engine running?

No. No hissing. I've been googling and would the idle air bypass valve be a possibility?

What I am looking at is a leaking power brake booster. The brake booster works off of engine vacuum and when you step on the brakes with the engine running, the vacuum booster requires more vacuum which can cause the engine to run rough or stumble. You can try a simple fix, and see if it takes care of the problem since you have read up on the IAC valve. Remove the IAC which is located on the throttle body where the rubber boot from the air filter connects to the engine. Take the IAC off and clean it and also clean the throttle body. Then reassembly it and road test it to see if the problem is gone. You can use a throttle body cleaner to clean both of them and any auto parts store will sell it.
