Do you suffer from cough or running nose?
Any problem in breathing?
Any past medical issue?
Fever?
Pain in swallowing?

Some allergies. Normal for me. Breathing seems ok, but it makes me uncomfortable. No fever, no painful swallowing. The swelling seems to be the upper portion of throat where that (pardon my terminology - that dangling thing hangs down) This has happened several times now. I have tried to rule out food allergy, nothing consumed that would seem to cause it. I have recently had some gerd issues, but that seems to have subsided after using Zantac. It's uncomfortable. Will antihistamines help the swelling ?

Well, this can be due to Thyroid problem. other possibility can be- Inflamed tonsills. A clinical examination along with testing is important for diagnosis.It becomes important to rule out the possibility of- Esophageal stricture

As such a visit to doctor for clinical checkup and evaluation is necessary. You doctor can advice blood test.
You need to consult ENT doctor for management of this issue.

Well, you can take Motrin 400mg twice a day, and can use a Anti-histamine Zyrtec. These are available as OTC.

You should make an appointment with ENT doctor for evaluation and treatment.
