Hi and Welcome. My Name is ***** ***** I look forward to assisting you today with your question.

That option is called Imposition and is it not available in Mac by default. To get that feature you have to download and install an application named Create Booklet --> https://www.macupdate.com/app/mac/21068/create-booklet

This is a PDF plugin that add a Create Booklet option in Print menu. Install this application.

Then open the application where the document is saved, click on File > Print. In the Print menu, click the PDF button and choose Create Booklet from menu. Click Print and this will create a PDF in Booklet form and it will open in Preview. Now you have to print that PDF again from File > Print to the printer.

Please let me know if that didn't work, so I will continue to help you
