Signature graphics are rather hit and miss under iOS. A couple of tips that may help.

First, after you've pasted the image, make sure there are no spaces in front of where the image is pasted. This often causes intermittant issues where the graphic is viewable on some phones and yet not others.

If the above doesn't work, email the picture to yourself and view it on the iPhone. "Forward" the email and while you are in editing mode copy/paste the pic from the email you are editing to your signature.
