how do i delete some sites from the Safari history but not delete all of the sites?

In Safari, click History menu and select "Show All History". In that window, select the history item that you want delete and just press delete button on your Keyboard.

No. This would be fine for a Mac, but my question was on the iPad not the regular MAC. How do you selectively delete a history item on the iPad?

Nope, you can't delete individual history on iPad...
