I want to check my mail only once in a while ( eg three times a month during travel) and not have iPhone3GS load 2,000 e-mails since last use

That is going to be hard to do, since the iPhone will want to synchronize the mailboxes and it has to get all to do that.

What you can do is find out if your email provider has a webmail interface. If so, check your Mail though that and then temporarily disable the mail account on the iPhone. That way the only time it will sync, and get any and all mail, will be when you enable it again.

Otherwise, I am not sure you'll be able to stop it from wanting to get it all.
