If I'm video conferencing with someone using iChat or Skype, can I feed the video of the person I'm talking to out to a secondary monitor or projector so that a large group can see that person?

Yes anything that you can see on your display can be mirrored to your second monitor or projector. You just plug in a compatible device to an available video port. In the Display Preference you can set it to mirror or show an exact duplicate of the first display or you can set it as extra display space, as if you had that much more to your desktop.
