When you connect your iPod to iTunes, it will automatically sync.

Just go to the Summary tab after clicking on yur iPod under Devices and click on Manually Manage Music or only sync checked songs. Depends on your iPod.

You can also drag individual songs onto the iPod icon under devices as well to move them manually. Uncheck others in your playlist(s)/Library to keep them from syncing.
