That would point toward low coolant level which would also cause gauge to go low. Coolant shouldn't disappear so this would mean you probably have a small coolant leak somewhere. Start by adding coolant to see if that takes care of problems, if so next step is finding leak. You can use dye and a pressure tester to find leak. If coolant is not low then I suspect problem with either thermostat or coolant temp sensor. Give me a few minutes and I'll send pictures of both, thanks.
The coolant temp sensor is located on the front top of engine with 2 wires going to it. One is brown and one is green/white.
