I sent a summons by certified mail to an opposing party. It was signed for by another employee in their office. They are claiming service wasnt valid. What can be do to the person who signed for it?

There is nothing that you can do to the person that signed. Service by certified mail is required to be restricted delivery to that particular person but the post office often ignores that designation. That is why personal service is the preferred way.
