I was in an accident. My insurer says it is totaled. I would like to keep the hood ornament, but I don't know how to remove it
JA: What is the model/year of your Jaguar?
Customer: 2005 S-type
JA: Are you hoping to fix this yourself? What have you tried so far?
Customer: It's at a repair/collision shop. I have to go there tomorrow to retrieve any personal items
JA: Anything else you think the mechanic should know?
Customer: I just would like to retrieve the plates and ornament

They used 2 different type of leaping jaguar ornaments on the s-type.

One has a stud that goes thru the hood and has a nut on the underside of the hood. Simply loosen and remove the nut and pull the ornament off.

The second type has no stud and only uses automotive adhesive tape holding it. you would need to pry it off with putty knife by slipping the putty knife between the ornament and the hood panel.

Just pop the hood and look on the underside of it to see if there is nut or not to determine which yours has.

One note of caution though. Make sure you have permission to do this. Once a car is totaled by the insurance company and you and they come to agreement on the payout for it, the insurance company owns that vehicle and could charge you with theft for removing any factory parts from it.
