I have a Goodman GPG13 Series 3.5 Ton Package unit

Hello,
I have a Goodman GPG13 Series 3.5 Ton Package unit installed on the roof of our store. I'm trying to determine whether I need to add refrigerant (R22) based on my the superheat numbers I'm getting. For some reason my superheat number both yesterday and today 50 degrees plus seem very high. I'm suspecting my digital temperature probe but I am insulating it when taking my line temps.
Outside Temp. 93 Dry Bulb
Inside Temp. 78 dry Bulb @ 60 % Humidity
Low-Side psig = 55 (R22 Temp = 31 degrees)
suction Line Temp. = 86 degrees
High-side psig = 200 (R22 Temp = 102 degrees)
Liquid Line Temp. = 103 degrees
