how do you tell if it a bad thermostat? It only recently started to do it.
disconnect the wires from the thermostat, if the burner stops then it's the stat

will the heat just turn off if the wires are disconnected?
IF the thermostat is the problem. I am assuming you mean the burner is running when you say the heat is running. You said this is a gravity system so the burner is the only moving part.
if the burner doesn't stop when you disconnect the thermostat then you could have a short in the thermostat wiring or a bad control
