The CRV uses a dual speed cooling fan to keep the vehicle from over heating. If the refrigerant level in the AC system is too low, the dual speed fan will never kick on to high speed. So as unusual as it sounds, the engine is overheating because the AC doesn't have enough refrigerant. Low refrigerant would also be causing the AC to stop working when at idle.

To clarify, is this a Jeep or a Honda CRV?
Also, the level of the AC refrigerant, not the coolant will affect the fan operation- if it's a CRV.
When it was overheating were the fans on or off?
What pressure does the high side AC line reach?
Have you replaced the AC control relay? It could be heating up and not working.
