JA: I'll do all I can to help. How long have you been dealing with this?
Customer: we have lived here and never used the fireplace
JA: Just to clarify, what type of fireplace is this?
Customer: full brick
JA: Do you plan on doing the work yourself?
Customer: maybe if i can find a cap maker
JA: Anything else we should know to help you best?
Customer: the chimney pot has to be removed so maybe i should get the whole job done

There are chimney caps that are easy to install yourself provided you have access to the roof and it is not too steep.
Dont let the size of the chimney fool you the cap fits into and over the flue portion and often is all that is needed.

Depending on the style of your home and how decorative the
need the cost could of course be higher than the estimates given.
Copper and decorative chimney caps can start around $500

I want to cap the entire top of the chimney approx 140cm x 60cm and come down a few inches to waterproof the entire top how much would this cost in colourbond or copper or stainless steel

Colourbond would be the least expensive. Copper the most.
A sheet metal fabricator would run $200 -$300 for labor, they can give you the best price on the metal whichever you choose. The copper will turn colors with time while the stainless and colourbond would pretty much stay the same.
The stainless may cost more to fabricate . Installing the cap would be around $150.

These prices are just estimates and may vary a bit out your way.
Total would be between $550 to $950 with you doing none of the labor.
Deduct $150 to $200 if you install it yourself.

This is something that is usually handled by a sheetmetal and roofing company. A cap like you want is not mass produced because of the differences in size.
