I'm putting in an attic knee wall on a bumped up attic. From a materials standpoint, I need to consider the quality of the following materials: siding, insulation, windows, drywall, and carpet. Did I leave anything out? Please give me your comments and thoughts on the attached scope of work.

The contractor should furnish proof of a current license and proof of insurance.
This is done by showing where the license is issued. Who it is issued to and when it expires.

For proof of insurance the contractor should furnish the policy numbers for their general liability and their workmans compensation insurance.
The insurance agency should be listed and the expiration dates of the policies.
Not the just the name of the company but the agency listing the policy. / policies

There should also be proof of a license for the city or county where the work is being performed.

or 30 days. A date could be substituted for start date and finish date to remove any doubts or misunderstanding of the 30 day concept.

Some people don't like to pay anything up front . "Authorization/signing of contract " but as long as that amount is kept small should be no problem.
It should cover time for preparing documents and drawings and cost of drawings.

Looks like you have done a good job here. You can always check back and change any wording that seems confusing or leaves an item unclear.
Specifications can change as change orders also or before the contract is signed.
IE brand and finish of paint.
