Hello. There is many factor that can get a grilled chicken dry:

- Removing the skin (even if it can still be done well without it)

- Overcooking (letting it for too long)

- The different cooking time for the different parts. If you can separate the parts (legs, wings and breast) before the cooking you can achieve a more optimal cooking (i find it less messy to cut that way also as it is ready serve in plates).

I personally paint it back with the lost fat (not too much as you don't want it to catch on fire). The coating oil fat (that you can spice) prevent water evaporation.

To be sure to not have it dry you have to use a meat thermometer that you plunge into the center of the meat. Making sure to not go over 160-165 F.
