when using a chocolate melting pot or tempering pot can I leave the chocolate in the pot melting 4 days or we instead of having to turn it all send a chocolate cool and we need to rebuild it again. We use it once a day for maybe 10 minutes but it takes an hour to melt chocolate. So can I just keep it on all the time that's not good for the chocolate
Hello and welcome. I don't think 4 days will cause any fat degradation but you may have to mix it well before use because sugar and fat may dissociate by gravity (with various ending depending of the kind of fat tin that particular chocolate).
