If it's cooked at around 250 degrees or so, allow for at least 75 minutes of cooking time for every 10 pounds. So, for a 50 pound pig, you should plan for 6.5 hours. Remember, low and slow is always the best.

Make sure the pig is turned every 30 minutes.

Folks used to say that all internal temperatures of the deepest meat should be at about 165. Keep in mind, the hams and shoulders will be the last to cook thoroughly. However, as of May 2011, the USDA said that it's safe to cook pork to only 145 degrees if you prefer something pink. http://www.fsis.usda.gov/News_&_Events/NR_052411_01/index.asp
