we what to make a fruit chewy candy but need to make big quantities about 500 kg per day also need a recipe that is affordable to sell to school kinds.
we are making at the moment but find that the shape goes flat.
our recipe hat we are using is as follows :330g egg albumen,600ml water and 1 kg glucose this is to make a frappe step 2 : suger 14 kg glucose 16kg cooked to 133 c step 3 : after cooked and we add the syrup to the frappe into a mixer after cooing we put trough a forming machine to get the ball : the problem is we the balls go flat.
