I found this site and from what I am understanding is that there are 7 different parts to the turtle that can be cooked differently, such as a steer would have hambuger, steaks, rump roast, etc. different types from the same animal, but I trying to track down what the parts are each because other web sites don't agree with it, and say the meat is all the same and can be cooked differently. Here is the one that gives the best information.
