I am an autoentrepreneur traiteur. I need to use the services of waiters from time to time. I can't employ them myself. If they were registered as autoentrpreneurs in their own right, would this work as a way of paying them when I need them to work, particularly if the client paid them direct.

No this would not work in France. You will need to employ them. However, if there is a waiter service that you can hire from time to time, you can use a waiter service as long as the waiters are not under your command (subordination). This is a way to get around what you want to do.
