The WHITE/RED striped wire to the switch is shored to ground between the sensor and the instrument cluster. When the engine is off or the oil pressure is low, the oil sensor will close and complete a path to ground and turn the oil light on. You will need to inspect the harness from the sensor to the cluster to locate the short to ground and repair it to turn the light off.
