08 ford f 250 started overheating with no load on the Interstate stopped down gallon of water adders called down added a load approx 8000 lb overheated shut of AC cooled right down ran 65 instead of 75 with AC rest of trip no problem?

Hi. SOunds like you have a coolant leak somewhere. The coolant was low and you added a gallon. Then when you started driving the vehicle probably overheated because there was an air pocket in the cooling system since it was so low. Then, like it commonly does, it must have burped out the air pocket into the reseviour and you were fine the rest of the way.

At this point you'll probably be good if you just keep the coolant filled. But you probably should have the truck checked for a coolant leak if you were a gallon low.
