Only one of you can claim head of household with the child. I would use the person with the highest income, which is you. This will stretch out your tax brackets to be more similar to what a married couple gets.
You will get the biggest tax benefit and savings with you claiming head of household and claiming the child.

She just told me she it's planning to put head of household at her grandparents house. So that means I would put head of household at my home. Would I still benefit off of it or would it now be if she claims her?
You would still benefit more, because you have the higher income
and technically according to IRS rules you're the one who gets the deduction, because you have the higher AGI

It doesn't matter who claims the child from one year to the next. You can still be head of household if you provide over 1/2 of her living expenses, even if she's claimed by her mother

Yes, you would pay tax only on the amount of income that you make. Did you pay tuition during the year? If so, you might can get some educational benefits that will lower your taxes
