The bridegroom's uncle passed away after the wedding invitations and envelopes were printed. Should the original envelope with his name printed be mailed, or, should a new envelope listing only his wife be handwritten and mailed ?

Yes, it would be more appropriate and kind to re-address the invitation to only his wife.

Leaving his name on the envelope would be a painful reminder to her of something he was expected to share with her and is now, sadly, not.
