if a vechile is listed on probate papers as one of the assets

This answer was rated:

if a vechile is listed on probate papers as one of the assets of the will can a executor drive it before the probate is finalized.
It would not be advisable unless the executor was also listed as the beneficiary of the vehicle or was intending to purchase it from the estate.

The reason I would not recommend driving it is that if the car was in a wreck, the executor would be liable for any damages to the vehicle.

even if it is in the state of FL

Yes, even in the state of Florida. Once an executor is appointed over the estate, they become responsible for the contents of the estate. Using the car and possibly causing damage to it could lead to a suit for breach of fiduciary duty against the executor.
