how binding is an employment agreement? if I signed one stating I will work for someone and then change my mind, can I terminate it without facing legal reprecussions?

this is a common situation, if the employment agreement does not have a damages clause, a lawsuit for breaching the contract would be difficult for the employer, unless he can prove that he suffered actual damages from you not joining them.

Be aware NJ is an at will State, which means an employee can leave a job at anytime, so if the agreement states you are an at will employee, you would be able to leave at anytime as well.
