First of all, make sure you have tried completely shutting down the iPad then starting it back up.

Next, check with your e-mail provider to make sure there haven't been changes to the outgoing mail server settings. If there are, you will have to change those to get it to send again. Alternatively you can delete the account on your ipad (anything in the outbox will be lost), and then re create the account on the iPad.
