We are using free Berkeley sendmail software (or some variant of it) that is physically on premise in our office, it’s an IMAP protocol and we have the VMware Zimbra client for web-based mail. We would like to move to Gmail.

Moving to GMail is easy enough, I think.
It can be configured to use IMAP last I heard.
