Okay, I replied to your question one minute after you asked and I am happy to help you with it.
So the worst thing would be a blood sugar spike.
To help prevent that I would not feed him any large amounts of food.
If you can divide his food into servings and give him a serving every hour until bedtime.
As you probably know there are no over the counter substitutes for insulin.
If you give him a small amount of food every hour, instead of in meals, then hopefully his blood sugar will not surge too high.
Drinking large amounts of water which would result in large amounts of urine being passed.
Blood shot eyes
Restlessness or anxiety
Confusion or shaking
Abnormal pupil size
Vomiting or diarrhea
