Does this type of theft not get covered under a criminal offense? My ex-partner also had two other co-conspirators who helped her stitch the story at the time, to tag me along with it. Isn't all that a criminal offense?

It could be any number of criminal offenses... I don't know the specifics of your case, but based on what you have already described and since bank accounts are involved there could be bank fraud/wire fraud, etc.
