Hello there, There are options, but at some expense. The V8 was fitted with Bosch K jetronic fuel injection from 1977 onward, & a retrofit of this system is possible, but at some cost. It would also be theoretically possible, with some engineering, to fit a late model Bosch EFI system off, for example, a late model V8 Ford, utilising an aftermarket ECU for tuneability. The original SU carburettors are unique in many ways, but there are new reproduction parts available for them. This would facilitate bringing your induction system back to blueprint specification, assuming you have wear & tear issues with your current units. At the end of the day, anything is possible, but at some cost.
