If no fault codes are setting then odds are monitoring data will be required at the time the chime sounds to be able to determine what is causing it. It's possible that the problem could be internal in the instrument cluster but odds are something is happening fast enough that you aren't able to see the warning light.

The most likely thing to cause this and not set a fault code would be low brake fluid. Can you check the brake fluid level?
