Hello and welcome to JustAnswer!
It sounds as if your trans may be going into limp in. When the trans controller sees an issue that can cause potential damage or thinks it doesn't have complete control it will lock you in third gear. This will cause it to be sluggish on takeoff and RPM's will be high if you attempt to drive it at normal highway speeds. The most common cause of limp in on this trans would be the solenoid pack mounted to the valve body.
Have you checked for fault codes in the powertrain and transmission control modules?
