It's not possible to completely disable factory security systems. They are controlled by software in multiple modules. If security systems could be disabled at will then they couldn't prevent theft.
You may have a bad disarm switch on the lock cylinder of the driver's door or the switch may have popped off the lock cylinder. Try unlocking the passenger door and the trunk, these will also have disarm cylinders and as long as there are no other problems one of these should get you running again.

What exactly is the car doing?
That's not a factory security problem. If it was a factory security problem the engine would start, run for two seconds and then die.
You may have an aftermarket alarm on the car. If it was a factory security system the engine would start and die along with the lights flashing and horn honking. That's why unlocking the doors didn't work, it's not factory.
