I have a 2005 Silverado 2500hd. It had the standard am/fm

I have a 2005 Silverado 2500hd. It had the standard am/fm radio. I recently upgraded to an ac delco am/fm cd/cassette. For some reason it isn't as loud as the old one. Can I install the Bose amplifier without too much trouble?

This will likely be more expensive than adding a Aftermarket 4 speaker AMP.
For the Bose AMP, you need the Bose Unit, which you may already have by the info of your post.
You will need the Bose / GM Wiring Harness & the Bose Speakers.
Then, if you don't have the Bose Unit now, you will need the Bose Unit Programmed to the BCM via Dealer Scan Tool.

May I ask why you did not go with Aftermarket Unit?
Typically Aftermarket has a lot more to offer for less & NO Programming via Dealer.

I prefer the look of the stock unit... If I install an aftermarket amplifier is it any easier? Will that make it louder?

This will depend if the New Unit you installed is Bose or Internally Amplified, if there is On-Star (regardless if it is connected)
You could use a IPAC Adapter like:
