Without seeing it and taking a biopsy it is difficult and probably impossible to say for sure, but there is a cancer... squamous cell carcinoma... that is common on the mouth, eyes, and ears of cats. This cancer destroys tissue and can look like you are describing. This would be the most likely diagnosis. There are other fungal and bacterial infections that are possible, but much less likely.
