So to answer your question in a direct answer, yes you can disconnect the battery when the engine is running but you are stressing the alternator and it will not last long. I would say safely you can leave it disconnected for up to 5 minutes after that damage to the alternator is defenite.

OK So there isn't really a direct accurate answer on how long the alternator will run without the battery, but from a technical stand point and from my experience not long. I mean you can run an engine without oil but how long is it going to last? no one can tell for sure until you try it because it will vary greatly.

Well the car will have 2 parts. There's the electrical system and then there's the mechanical system. One depends on the other for the car to run. For example if the electrical system is working properly but there's a mechanical issue then the car won't run and vice versa.
So although it's hard to specify one part I will do my best.
For the electrical system of the vehicle yes the battery and the alternator are the heart.
when the engine is not running the battery is the heart of the electrical system. once the engine is running the alternator takes over 75%
When it comes to the mechanical side of the engine alone the oil pump is the heart of the engine.
If there's no oil pressure the engine will have oil starvation and will seize up and stop working which makes a healthy electrical system useless.
There are other components that could also be described as the heart of the vehicle like a fuel pump or starter but they are not primary
To compare it to human parts, if the heart is working but the nervous system is not then the body will work but not fully
