If your employee gives you a resignation letter take effect in 2 weeks
then calls 2 days just before the resignation was done and says she
has a doctors note for stress. How do I approach this legally?

I don't know what you mean. Are you saying she wants to change her mind and now wants to say she is on sick leave?

Is she in a union?

No we don't have a union and yes she is changing her mind she wants to be off work on stress leave and what happens she's already given her resignation?

Once she has handed in her resignation she has terminated her employment contract with you. She cannot turn around and then say that she is still continuing her employment with you but taking sick leave.
