I have a Single Member LLC, in the operating agreement do I also need to appoint a Manager?

You can do this one of two ways, you can appoint yourself the Manager in your operating agreement, or you can specify in the operating agreement it is to member-managed and in that case you need not appoint a manager. In that instance, you would sign everything on behalf of the LLC as "Managing Member."
