You may have quite a few things going on.
The problem may be with a/c performance or it could be an issue with the blend door, which is the door in the heater box that controls temperature. When the problem happens see if you're able to change to heat. If you are then the blend door is operating. If it's not operating it could be the actuator, control head, or a programmer issue.
If the problem is with the a/c system yet the compressor runs when it's blowing warm then the problem is most likely either a restriction in the system or the cooling fan not working. A restriction wouldn't be intermittent, if it cools normally when it does work then charge shouldn't be an issue.
If it only warms up at low speeds or stops but cools while driving then you have a cooling fan issue. The fan has to come on at low speeds and while stopped to pull air through the condenser and keep high side pressure down.
