Hello
Sadly, in NSW it is very difficult to retract statements.
All you really can do now is wait for the hearing in court, and explain same to the court.
In respect of how the police undertake statements, a court may accept they took all precautions in respect of taking the statement and made sure you were not too intoxicated at the time.

It would be best at this stage to just wait for court and will be benefit of reflection, give the court oral evidence as to what occurred.
