Oftentimes, minerals built up on the evaporator allow the symptoms you are now seeing to occur. Has the machine been cleaned with a quality cleaner recently?

If the machine is in continuous use, about every 3 months, more if the water is hard that feeds it. How often is it cleaned and was it cleaned recently?

Only cleaned once per year. In continuous use, however not much actual use of ice just on weekends.

Actual use won't matter, it continually melts and replenishes, so it will run as much anyway. I would run another clean cycle and see if it changes.
