Welcome to JustAnswer. Most commercial dough mixers use 90 weight gear oil, unless your is lubricated with grease. The grease used is usually the 120 weight lithium, food safe type.

Gear lubricant. If it's oil, fill the gearbox, until the oil just runs out of the filler hole. If it's grease, use just enough to cover the gears.
